For the next several days I will be posting about the World Congress of Families. This year it is being held in Sydney, Australia.  Remember how we helped to raise funds for Angela to attend? She is sending daily reports of the presentations, interviews she is able to have, and more. I am excited to share with you what she is experiencing. There are so many around the world - politicians, religious leaders, community organizers, trained professionals, and others - who are dedicated to defending the family. I will try to post each day's events in order so you are not reading them backwards as you scroll down. I have broken up Angela's summaries into several posts so it isn't overwhelming to see a HUGE post. Remember, if you have any questions you would like her to ask when she gives her interviews, leave them in the comments and I will pass them along to her.

Chocolate Chip Cookies



I know, I know, everyone already has a chocolate chip cookie recipe. I just thought I'd share our favorite one to use.

Chocolate Chip Cookies

2 sticks unsalted butter, cut into cubes
3/4 cup granulated sugar
3/4 cup lightly packed brown sugar
2 eggs
1 1/2 cups whole wheat flour
1 3/4 cups white flour
3/4 teaspoon salt
1 teaspoon baking powder
1/4 tsp baking soda
2 cups semisweet chocolate chips or chunks
1 cup walnuts, toasted

Preheat oven to 350 degrees.

In bowl of electric mixer fitted with paddle, cream together butter and sugars until well blended and fluffy, at least 4 minutes. Add eggs, one at a time.. and beat until well incorporated. Add flour, salt, baking soda, baking powder and mix until just combined. Gently fold in chocolate chunks and nuts. Scoop dough (about 2 tablespoons for each cookie) onto a greased or parchment lined baking sheet. Bake for 8-10 minutes.

These cookies are slightly thick and very gooey. Bake longer if you prefer a more "done" cookie.

  1. A "done" cookie? Who wants that? These look amazing! I have a great recipe for "gourmet cookies" that I got from a friend. They turn out very sturdy, and are good for care packages, but I needed a good gooey recipe. I can't wait to try these! :-)

  2. Just made these with my kids and they are tasty. Since seeing the post I couldnt get that delicious photo out of my head. The dough was a little more dry than I am use to. I formed balls with my hands. They are soft and moist enough when "done". Thanks!

Put "eat chocolate" at the top of your list of things to do today. That way, at least you'll get one thing done. ☺ There, don't you feel better?
